Texas Loves Its Chocolate: An Ancient Treat From The Mayans Just Gets Better

Very few of us don’t have at least one good memory of chocolate. Remember warm chocolate chip cookies after school, or brownies pulled straight from the oven on a cool, fall day? Hot chocolate is still the beverage of choice for many children, and few of any age can resist a scoop of chocolate ice cream. With a hot Texas summer approaching, and cities like Dallas, Houston, and Austin already getting a hint of the heat to come, a hot fudge sundae just might be the cooling cure for a lot of maladies. Not even health insurance can provide a sweet cookie and fresh glass of milk when it’s really needed, after all.

The first records of chocolate consumption date back to the Mayan Classical Period, or between the years 250 and 900 on our modern calendar. Cacao beans were cooked, ground, and made into a paste. When mixed with water, a bitter beverage important to Mayan, and later Aztec, ceremonies was created. That means chocolate has not only survived thousands of years of conquests, changing political maps, shifting cultures, and natural disasters, but also managed to grow more popular. That’s fairly impressive.

When Spanish conquistadors came to the Mesoamerican areas now called Belize, southern Mexico, Guatemala, Honduras, and parts of El Salvador, they, too, discovered chocolate from the indigenous peoples. The Spaniards soon brought the seeds of the cacao back home with them, where the traditional recipes were modified and sweetened. The modern uses of chocolate in Texas and the rest of the Western world are now so varied as to be impossible to name in brief — from a shake or two added to cooking pinto beans, to rich layers worked into decadent flourless cakes.

One of the reasons quality chocolate is so prized is that the preparation process is long and sensitive. The pods must be harvested from the trees at the right moment, dried and fermented for the right amount of time, and then ground, mixed, aerated, tempered, molded and otherwise processed to perfection. The level of quality depends on the beans, as well as the composition of the final mixture, the roasting, and the types and amounts of additives. The most sought-after chocolate is organic, single-bean origin chocolate, which simply means that all of the cacao beans were grown organically and gathered from the same source. Most commercial chocolates, for instance, will mix inorganically grown cacao beans from different regions in different countries, and of varying qualities.

There’s been a boom of higher grade chocolate sold in American markets recently, including in Texas. It’s common now to see a supermarket or health food market devote an entire section to various types of gourmet chocolate — and one need not go to cities like Austin, Dallas, or Houston to find them. They’re all tempting, oh so tempting, but it’s easier not to give into that temptation when it’s unclear how to use them properly.

“What’s the difference between dark chocolate and semi-sweet chocolate?” “Should I pay attention to all the percentages? This one says it’s 65% pure chocolate, and that one says it’s 45%. Which one do I want?”
The best choice depends on for what the chocolate will be used. To make giving into temptation that much easier, here’s a basic run-down of the main categories of chocolate:

White chocolate usually has very little chocolate in it. In other words, the cocoa content in white chocolate is very low, and most of its composition will be of other ingredients: butter, sugar, milk, emulsifier, vanilla, and flavors. Because there are no non-fat ingredients from the bean, its appearance is very pale. Some “white chocolate” marketed in the U.S. may not even have any cocoa content at all.

Genuine white chocolate is usually used for specialty deserts.

Milk chocolate is roughly 10 – 20% cocoa solids, although some gourmet varieties will have more. The rule is that milk chocolate should have no less than 12% milk solids. It’s not usually used for baking — except in cases of cookies, of course.

Dark chocolate is a sweetened chocolate with high cocoa solid content. The more cocoa content, the more bitter the taste. Dark chocolate contains a maximum of 12% milk solids, although many gourmet brands have no milk at all. Varieties of dark chocolate include sweet, semi-sweet, bittersweet, and unsweetened.

Dark chocolate is used in many recipes, including a lot of baking recipes. These directions are usually very specific, however, and, when it calls for semi-sweet dark chocolate, for instance, use it. Each type of dark chocolate has specific baking properties.

Semi-sweet dark chocolate is often used for baking cakes, cookies, brownies, and other sweet treats. Its composition is 40 – 62% cocoa solids.

Bittersweet dark chocolate is a sweetened, dark chocolate that contains at least 35% cocoa solids. Good quality bittersweet bars will have a much higher percentage, though, usually between 60 and 85%. The more cocoa, the less room for sugar. That means the higher the cocoa content, the more bitter the taste.

Unsweetened chocolate is very bitter and is only used for baking. It is almost 100% cocoa solids, half of which may be fat (or cocoa butter).

So now that you’ve had a brief history lesson and run-down of the different types of chocolate, a whole world of cooking has opened up. Try a traditional chocolate beverage recipe, dare to bake that luscious chocolate flourless cake, and try a bar of bittersweet dark chocolate, with at least 65% cocoa content, to really appreciate the true taste of its main ingredient — cacao. Watch out: over time, you, too, will become a chocolate connoisseur, passing up low-grade chocolate for that organic, single-origin, Venezuelan bar.

Moderate chocolate consumption, according to many studies, is not harmful, and may even be good for you. What you put in your body will certainly affect your health as you age, and eventually your wallet.

Buy xanax and reduce anxiety to manageable levels

For those of you who understand and support the idea of evolution, worry has probably been one of the key survival characteristics. Imagine what life must have been like as a hunter gatherer, living on the plains, surrounded by large animals that would prefer you not to eat them for lunch. In such circumstances, the fight or flight instinct is to the fore. More importantly, the early humans probably worried about where the next meal was coming from and all the different ways in which they might die. The ability to remember what has happened and use that as a basis for predicting the future is a key feature of genuine intelligence. The ability to plan for survival gives humans the edge over their environment. The other side of the coin is that the laid-back guys who found it difficult to get out of their caves in the morning had little to eat come the evening. Hunger sharpens the mind and encourages survival.

Translating this to the present, we have some new research out of the atmospherically named Black Dog Institute, one of Australia’s leading centers dealing with the spectrum of mental disorders. One of the persistent dilemmas for doctors is how to relate to patients who have had a heart attack. Obviously, any event affecting the heart comes as a severe shock to the individual. It shakes physical self-confidence. Not unnaturally, some people get depressed. Many worry about the risk of a second attack. Although there is a natural sympathy with heart attack survivors, most doctors want to encourage people to work their way back to a positive outlook. While avoiding the, “snap out of it” school of practical psychology, people have been encouraged not to worry. This latest study followed some five hundred patients, all of whom had a serious heart attack. Those who were diagnosed with general anxiety disorder (GAD) were monitored but given no specific therapy or counseling. These patients have had a better survival record than those who were naturally less worried.

It is always difficult to identify cause and effect in studies of this nature. But the research team speculates that the GAD encourages people to be more protective of their health. They worry more and so prove more diligent in following instructions on lifestyle changes. They want to survive. So far, this research stands on its own, but it has proved provocative in challenging the assumption that anxiety is a risk factor for a second heart attack. New studies are being set up in different countries around the world. It is not a new idea that, in the right conditions, a little anxiety is helpful. What surprising is that the more advanced GAD is also helpful. So, if you have recently had a heart attack, think twice before you buy xanax online. No matter what your doctors may be telling you, this study suggests you may live longer if you continue anxious. Only if the anxiety is growing more severe should you agree to use an antidepressant. Generic xanax is the cheapest and most effective remedy at this stage. But do not take it too long. Some residual anxiety may be a good thing.

News stories can strike you in so many different ways. Some will seem stupid, others heart-warming. In some cases, there’s just an overwhelming sense of sadness. It was at this point that Dr. Conrad Murray enters the picture. The quality of the singer’s health is somewhat cloudy before this time. It seems likely he had suffered insomnia for some years but, the combination of additional stress and muscle pain from starting to dance again probably made the problem worse. In any event, the good doctor was paid some $150,000 a month to minister to the singer. In practical terms, this meant the doctor administered a nightly cocktail of drugs to knock his patient out. The basic combination was propofol and lidocaine through an intravenous drip. Not to put too fine a point on it, this combination would have rendered an elephant unconscious. Under normal circumstances, propofol is only used in carefully supervised hospital environments. The doctor was not licensed to administer it.

We do not need to go into the gory details of the death and subsequent investigations. The gossip pages have been full of the story for months. What brings it all back on to the front pages is that the doctor has now been charged with involuntary manslaughter. So, once again, we all get a front-row seat in the theater of Michael Jackson’s life (and death). And the first question is, inevitably, “How were things allowed to get so bad?” Here is a man whose health had reached such a low point that he can only rest when knocked out by industrial strength anesthetics. This is simply extraordinary. This man is worth millions (despite all his best efforts to lose money in his later years). He could have bought the best in counseling and therapy to treat his insomnia. Every scientific journal over the last ten years and more has been carrying the results of clinical trials demonstrating the effectiveness of cognitive behavioral therapy. All he needed was some lose change and he could have bought the best in therapy for a few thousands of dollars. What psychological quirk drove him to embrace oblivion in an intravenous drip?

Celebrities often seem to be their own worst enemies. They are surrounded by weird people who advise them on how to spend their money. You can just hear someone enthusing, “I hear propofol will knock out an elephant and I got this great doctor for $150,000 a month who will give it to you.” If it had been someone “ordinary”, they would have bought some ambien online and gone to sleep like a baby. Or, if it did not work as well as expected, they would have gone to see their regular doctor, explained they tried ambien online, and received some cognitive behaviour therapy. Pain, Pain Go Away: Texas Seeks A Choice Of Treatments For Chronic Pain Sufferers Part 2

Texas is one of many states with thousands, possibly millions, of its residents suffering from chronic pain. Overall, chronic pain will affect between 15% and 33% of the U.S. population every year, and cost the nation $70 billion in medical charges, lost working days, and workers’ compensation — more than cancer and heart disease combined.

Chronic pain can be induced by a variety of situations, including work-related injuries, carpal tunnel syndrome, neurological disorders, joint disease, migraines, and autoimmune diseases, such as rheumatoid arthritis. Most chronic pain is located in the back, hip, and/or shoulders. Particularly with the proper health insurance coverage, however, these conditions can be effectively treated and, if not cured, at least managed. Texas is filled with clinics and doctors specializing in pain management — from Austin, to Dallas, to Houston.

While acute pain can be beneficial — warning, or forcing, us to stop an activity before we injurey ourselves further — it is quite different from chronic pain. Acute pain occurs on a temporary basis, such as when spraining an ankle, or even when breaking a bone. Pain is considered chronic when it has occurred either continually, or intermittently, over a period longer than six months.

One of the major frustrations with chronic pain is that so many in Texas, and across the United States, do not respond to treatment. Because many of the cases are work-related injuries, valuable workers in cities like Houston, Dallas, and Austin are being lost. Even the strongest medications don’t always work, and physicians are still not sure why. According to Dr. Zena Quezado, chief of the Department of Anesthesia and Surgical Services at the National Institutes of Health Clinical Center, it could be due to genetic makeup. Different enzymes metabolize these medications, and not everyone has the same enzymes, nor do they work in the same way. Varying levels of pain are also reported after the exact same procedure or injury.

Such conditions of chronic, seemingly untreatable pain can lead to anxiety, fear, depression, lack of activity, and unemployment. Its management, then, is arguably one of the most pressing health issues today throughout Texas and the rest of the United States.

While treating the various aspects of pain, including the psychological aspects, are critical, the following will focus on the major holistic forms of physical (versus psychological) treatment for chronic pain. (1) Acupuncture

Most acupuncture treatments performed in the United States are on victims of chronic pain, many of them back pain sufferers. An ancient Chinese practice, acupuncture is based on the belief that energy (or chi) flows through the body along certain pathways called meridians. When the flow of that energy is disturbed, unbalanced, or otherwise obstructed, pain can result. The focus of acupuncture treatments for pain, then, is to return the normal flow of energy, thereby reducing, or eliminating pain. This treatment has no known side effects, is found to be quite relaxing for most patients, and is often accompanied by herbs based on formulas thousands of years old.

Most Westerners are not accustomed to believing in a medicine that bases its principles on the flow of unseen energy, but, whatever one’s personal beliefs, acupuncture seems to work. Even the National Institutes of Health reported acupuncture as “beneficial” for chronic and acute pain. Further studies have indicated its effectiveness for carpal tunnel syndrome, and that it may increase immune response, as well as stimulate the production of endorphins, a natural pain killer produced by the body. In China, certain surgeries are performed with acupuncture as their primary form of anesthesia.

(2) Chiropractic Care

Spinal manipulation is considered a “proven treatment” for lower back pain by the U.S. Department of Health and Human Services. Though chiropractic care is effective for many conditions, treating disorders of the back and spine are, by far, the most common reason for seeking out such a practitioner.

Chiropractors focus on the spinal cord itself, believing that, if the spinal cord is able to relay unadulterated signals to the brain and other organs, then healthy function can be maintained throughout the body. Through careful adjustment of misplaced vertebrae, the spinal cord can regain its usual impulse signaling. This enables the body to restore normal nerve function — thereby reducing or eliminating pain, and heal itself of other ailments.

(3) Massage therapy

Massage is a specific type of body work, and focuses on the manipulation of muscles and soft body tissues. It works through the promotion of muscle relaxation, by increasing circulation in the lymphatic system (thus reducing inflammation), breaking up scar tissue and adhesions, promoting blood flow and, in the case of sinus problems or certain migraines, by promoting drainage of the sinuses. For back pain sufferers, massage therapy may be instrumental in managing pain without, or with fewer, medications. Strong anecdotal evidence, obtained from thousands of practitioners’ experiences, suggests that massage therapy may also help to realign tissues, tendons, and vertebrae.

Deep tissue massage is designed to release chronic muscular tension, and is generally applied with a fair amount of pressure on the affected area. There are numerous forms of massage, however, and, with so many choices, it may be best to do some research first. Look up a reputable natural health site online, or visit your local library.

(4) Herbs
Herbs are often classified in a separate category from Western medicines, and for good reason. Herbs are plant-based remedies, with no artificial or laboratory ingredients. But herbs and Western medications operate on the same principle: that, through the ingestion or application of certain substances, a desired effect may be achieved. Some herbs are very strong, or should not be taken with certain conditions, such as high blood pressure or allergies. Certain herbs, though with promising research results, are also controversial, such as marijuana. Though believed by many in the medical community to be highly effective in managing pain, it is still illegal in most states. Therefore, treat herbs as medications and never use them without consulting a knowledgeable health practitioner first.

For muscle spasms and cramps, angelica, black haw, cramp bark, kava kava, rosemary and valerian root are excellent choices. Hops, kava kava, passion flower, valerian root, wild lettuce, and wood betony also have muscle relaxing properties.
Relieve tension and nerve pain with blue violet, catnip, chamomile, gotu kola, licorice, rosemary, white willow, or wood betony teas. Use chamomile and licorice on a short-term basis only.
Capsaicin, a primary ingredient in capsicum (or cayenne pepper) can relieve pain through limiting the production of the vaguely named neural pain transmitter “substance P.” Capsaicin can be taken orally, or used topically when mixed with a carrier oil or cream. Studies with capsaicin have been used to treat pain associated with postherpetic neuralgia, diabetic neuropathy, rheumatoid arthritis, osteoarthritis, and cluster headaches.
Essential oils of jasmine, juniper, lavender, peppermint, rose, rosemary, and thyme can be used to relieve pain. Never ingest essential oils, and always apply topically with a carrier oil, such as jojoba or almond.

Chronic pain, though at times beyond frustrating, can be a manageable condition. With proper treatment, sound research, and good decision making, even most of the worst cases can at least be improved. If you suffer from chronic pain, be persistent about pursuing different types of treatment until you find one that helps. After all, you are the one experiencing the pain, and must therefore make the best decision regarding it.

Self-Help Anger Management Techniques

There are many reasons for you to feel anger. If you want to get out of the vicious cycle of anger, you need to first understand where the feelings are coming from, and what to do about it. In other words, before you can control your feelings of anger, you have to understand what causes them.

Some of the most common causes of anger are frustration, hurt, becoming annoyed, harassment, feelings of disappointment or of being threatened. When these feelings occur adrenaline is released into the bloodstream. This adrenalin reinforces your feelings of anger because your heart pumps faster and your blood courses through your system. Your blood pressure will increase and your muscles may feel tense. Basically, your body is gearing up for action in a ‘flight or fight’ response.

Understanding how to express your anger in a non-threatening manner can actually allow you to use your energy in a constructive way.

You have to remember that ignoring anger will not make it go away. If you don’t effectively deal with your anger, you can develop chronic tension and health problems. Accidents and personal problems can stem from your anger, and can create problems with loved ones and on your job. If left unchecked, your anger can lead to abuse, violent behavior and even crime. You need to recognize that you are angry, you need to determine what caused the immediate anger and decide what steps need to be taken to eliminate the cause.

You should never try to resolve your problem through discussion when you are angry, especially if you’re angry at someone. Calm down before discussing the problem and do not shout. Shouting only makes the problem worse and increases your anger.

Instead, understand why you are angry. Are you just trying to beat the other person in a competitive sense, or does a real problem exist that needs to be ironed out? You should never get person when discussing a situation that caused the anger. Put your energy into solving the problem that caused the anger, not the person. Getting personal in an argument will only make things worse.

You should listen to what the other person has to say before jumping to conclusions. Do not resort to name calling and insults, which will only extend the anger. It is OK to be assertive and to express your side without yelling and screaming. You also should not pout; no one likes an adult acting like a child when they are angry.

Don’t waste time and energy on a situation that is unavoidable. Use humor. Find something funny within the situation to help defuse a potentially explosive situation. Physical activity can help dissipate some of that adrenaline flowing through your blood. Walk, run or perform some other physical action that can take your mind off your anger. Make sure you get adequate rest as when people are tired, little things tend to annoy them, which is one of the causes of anger. Remember, even taking a time-out to calm down before an angry confrontation makes a bad situation worsen. Do not approach the problem until you have had time to think through both sides of the situation.

Women Face More Back Pain

Back pain is a big problem for woman all over the world. A third of women between the ages of sixteen to twenty-four have had back pain. By the time a woman reaches sixty-five, her chances of having back pain climb to fifty percent.

People don’t realize it, but there are more women then men who suffer from back pain. Furthermore, the pain that women suffer is worse and lasts longer than that of their male counterparts.

The pain is also different: with men the backaches are more often caused by an injury. With a woman the pain comes from the things she must deal with every day of their lives.

Back pain in women is triggered by a number of things. The most common causes are things they do at home like lifting, gardening and vacuuming. Menstrual periods can also trigger back pain. Pregnancy is frequently a back pain issue. Up to sixty percent of all pregnant women have some back pain, and the pain can get especially bad during the last trimester. Women are more likely to have injuries that cause back pain than men as well, and their back pain is likely to take longer to heal.

Women are also more likely to get hurt on the job, especially as they work more often in professions that can be tough on the back: health care services, retailing, hotel services and catering. A huge number of nurses hurt their backs every year; nearly five percent of them will be unable to return to nursing. Back injuries cause more workdays to be missed by woman in a single year than any other problem.

Many women are at higher risk because their job involves repetitive motion, pulling, pushing or lifting. Examples of the kind of jobs that put woman at risk for back pain include factory work, cashier work, telephone operators and data entry workers. Other professions that are dangerous for the back include bank tellers, who stand all day, and teachers or caregivers of small children.

After these women work at jobs hazardous to their back during the day, many come home to prepare meals, clean house, feed the baby, do the laundry and finish the remainder of the household jobs. Many of these jobs include bending, lifting, standing and twisting. All prime risk factors for back pain, as is breastfeeding, leaning over a crib and picking up children of any size.

Even when a woman wants to dress up she is at risk for back problems. Those heels she loves so much can increase the pain in her back. Tight clothes affect ease of movement. Even a woman’s bust can be a back pain issue. If her breasts are too large, they can throw the weight on her back.

Women cannot stop all the things they do just to try to prevent back pain. Children need their mothers and the things they do for them. The jobs they have outside the home are necessary for the income but as well their skills are needed in these jobs. There’s no easy solution for the hard working women of the world.

This is the American dream in action. You can have these miracles if you part with the dollars and take these pills. Except, when it comes to weight loss, the buzz words on everyone’s lips have been: lipodissolve, lipotherapy, lipozap and injection lipolysis. All these names have been coined to sell a very simple idea. The active chemicals in these injections go straight to the heart of the problem, seeking out fat wherever it may lie, hang or sag in your body and then dissolving it. As products and services, they have been heavily promoted by clinics and spas in different parts of the US, and sold through two websites by a Brazilian company.

The FDA has now issued formal warning notices to all the companies selling the variously named products and services in the US, and notified the authorities in Brazil. There’s absolutely no scientific evidence that these products are effective in any way. Is Medication A “Real” Anxiety Cure?

As a personal development trainer specializing in anxiety issues, and a former sufferer of
extreme anxiety and panic attacks, I can assure you the above statement is true-I’ve been there. I spent years of my life searching in desperation for an anxiety cure that was effective and would last.

Like many people, I tried the medical route: I was prescribed anti-anxiety medications that doctors assured me would provide a “real” anxiety cure with no severe side-effects or withdrawal symptoms…at least that’s what I was told.

Fast forward two years: I had gained 50 pounds, I suffered with chronic heartburn, fatigue, memory loss (my friends began calling me “Mr Short-Term Memory”) and sexual “dysfunction” (don’t even ask). My relationship was in ruins and I was barely able to function at my job.

And the worst part? My anxiety and panic attacks were still there!

Here’s what the medical community and drug manufacturers don’t really want you to know: anti-anxiety medications are completely ineffective for most people as an anxiety cure. The best anti-anxiety medications available have success rates that are only slightly higher than a placebo (that’s right, a regular sugar pill).

And when you factor in severe side effects like I had, and withdrawal symptoms, it’s easy to see why these medications aren’t really a good idea for many people.

And that’s exactly what the big corporations do. Which is great news if you are a stock holder, but terrible news if you are desperately seeking an anxiety cure, as I was for so many years.

So if medication is not the answer, what is?

A “real” anxiety cure must be sustainable, not a quick fix that makes your life progressively worse over time, creating a type of addiction that keeps sufferers feeling like helpless victims. A “real” anxiety cure is all about empowerment-taking back control over your life.

There is no “quick fix” for an anxiety problem. The only real and lasting cure is in dealing with the issue personally, taking full responsibility for it, and refusing to be a victim that waits for someone “out there” to come and “fix” your life. Because the truth is, no one ever will.

Of course there are resources out there that can help you along the way and even coaching programs to guide you step-by-step, but you must make the first big step right now, and that is to take 100% responsibility for your situation. This is not about blaming yourself–it’s about taking your power back.

Don’t believe the hype folks. The cure for anxiety is not to be found in a pill. I cured my anxiety and panic attacks years ago by following a number of simple techniques, but the very first step along the way, was to understand that “I” was entirely responsible for my anxiety situation, and only “I” could overcome it.

The sooner you take responsibility and recognize your role in the anxiety–the sooner you’ll take back control of your life.
